The numbers we work to
Four to five service staff per hundred guests for a buffet, eight to ten for table service. One buffet line per 120 guests, served from both sides. Thirty-two to thirty-six kilos of cooked chicken biryani per hundred. And we cook for the realistic attendance — 70 to 80% of confirmed guests at a Vijayawada function — plus 8 to 10%, rather than for the invitation list.
