Most couples do not need help choosing dishes. They need help knowing how many dishes, in what order, and which combinations actually work for 400 people eating in ninety minutes. Below are six complete menus in the shapes Hyderabad function halls actually serve, with the per-plate band each one sits in.
1. Traditional Telugu vegetarian — muhurtham lunch
Banana leaf, seated service. Welcome drink (panakam or buttermilk), two podis with ghee, pappu, one dry curry, one gravy curry, pulusu, sambar, rasam, curd, pickle, appadam, one payasam and one sweet, plain rice and one variety rice.
Item count: 14-16. Band: ₹280-380. This is the menu for the muhurtham itself, and the one most families get wrong by adding North Indian dishes that nobody eats before noon. See Telugu wedding catering.
2. Hyderabadi non-veg — reception dinner
Welcome mocktail, two veg starters and two non-veg starters (tray-served), mutton or chicken dum biryani, mirchi ka salan, dahi ki chutney, one veg gravy, one dal, tandoori roti, two salads, double ka meetha and qubani ka meetha.
Item count: 16-18. Band: ₹550-700. Biryani quantity is where this menu succeeds or fails — see the biryani quantity guide. More on biryani catering.
3. Pure vegetarian multi-cuisine — engagement or reception
Welcome drink, three starters, one live chaat counter, paneer main, one seasonal veg, dal makhani, veg biryani or pulao, jeera rice, three breads, raita, two salads, two desserts plus ice cream.
Item count: 18-20. Band: ₹500-650. The workhorse menu for families who want variety without non-veg. See veg catering.
4. North Indian — sangeet dinner
Welcome drink, four starters (two tandoori), paneer butter masala, one kofta, dal makhani, aloo or seasonal veg, veg pulao, assorted breads from a live tandoor, raita, salad bar, gulab jamun and one halwa.
Item count: 17-19. Band: ₹500-650. Pairs well with a late start because tandoor breads hold badly — insist on a live counter, not pre-made. See North Indian catering.
5. Multi-cuisine with counters — premium reception
Mocktail bar, five tray-passed starters, three live counters (chaat, pasta or Chinese, dosa or tandoor), Hyderabadi biryani, one North Indian main, one Continental main, breads, rice, salad bar and a dessert table with six items.
Item count: 26-30. Band: ₹850-1,200. At this level staffing matters more than the menu — ask for the staff-per-hundred-guests number in writing. See multi-cuisine catering and live counters.
6. Breakfast menu — nalugu, haldi or morning muhurtham
Idli, vada, two dosas from a live counter, upma or pongal, two chutneys, sambar, one sweet, filter coffee and tea. Item count: 9-11. Band: ₹150-250. See breakfast and tiffin catering.
How many items do you actually need?
More items is not a better menu. Past roughly 20 items, guests eat the same eight things and the rest is waste you paid for. The useful rule for a Hyderabad reception: two starters per hundred guests circulating at any time, one biryani or one rice main done extremely well, two gravies, one dal, breads from a live counter, and two desserts. Spend what you save on staff and hot-holding instead.
