A reception menu has one job the muhurtham meal does not: it has to feed several hundred people, most of them standing, inside a ninety-minute window, while they are also greeting the couple. That is a throughput problem as much as a food problem. Here are three reception menu lists that work in Hyderabad, and the layout that makes them run.
Menu A — Non-veg reception (₹550–700 per plate)
- Welcome drink: mocktail, jaljeera or fresh lime
- Starters, tray-served: chicken 65, apollo fish, paneer tikka, hara bhara kebab
- Live counter: chaat (pani puri, dahi puri) or tandoor
- Rice main: chicken or mutton dum biryani
- Accompaniments: mirchi ka salan, dahi ki chutney, boondi raita
- Gravies: paneer butter masala + one Telangana koora
- Dal: dal tadka
- Breads: tandoori roti, butter naan from a live tandoor
- Salads: green salad, onion-lemon, one Russian or corn salad
- Desserts: double ka meetha, qubani ka meetha, ice cream
Item count: 18–20.
Menu B — Pure veg reception (₹500–650 per plate)
- Welcome drink: mocktail or badam milk
- Starters: paneer tikka, veg kebab, crispy corn
- Live counters: chaat + pasta or Chinese noodles
- Rice mains: veg dum biryani + jeera rice
- Gravies: paneer main, one seasonal vegetable, dal makhani
- Breads: roti, naan, kulcha from the tandoor
- Sides: raita, two salads, papad
- Desserts: gulab jamun, one halwa, ice cream
Item count: 18–20. See veg catering services.
Menu C — Premium reception (₹850–1,200 per plate)
Mocktail bar, five tray-passed starters, three live counters (chaat, Chinese or pasta, dosa or tandoor), Hyderabadi biryani, one North Indian main, one Continental main, breads, a salad bar and a dessert table of six items.
Item count: 26–30. At this level staffing decides the outcome more than the menu does — ask for the staff-per-hundred number in writing. See premium catering and live counters.
The counter layout that keeps queues short
One buffet line serves roughly 100–120 people in thirty minutes. For 400 guests in ninety minutes you need at least three parallel lines, double-sided where the hall allows it, and the slowest item — live counters, hot breads — placed last so the queue does not stall at the front.
- Starters circulate on trays through the crowd; they should never have a queue at all
- Biryani and rice get their own counter, away from the gravies
- Veg and non-veg counters physically separate, with their own serving spoons and clear signage
- Desserts at the far end, so people finish and move rather than doubling back
- Water and mocktails at two points, not one
Timing, worked backwards
For a 7:30 PM reception, most guests eat between 8:45 and 9:30. That is the window the plan has to be built around — not the start time. Biryani should hit the counter within 30–45 minutes of the dum being opened, which means staggered vessels rather than everything at once.
What to confirm before the advance
- Every dish written by name, with the live-counter items marked
- Number of buffet lines and counters for your guest count
- Service staff per hundred guests
- Hot-holding and replenishment plan for the first thirty minutes
- What happens if the count moves 15% either way — agree the band and the rate now
