Hyderabadi Biryani for 100, 250 and 500 Guests: Quantity, Cost and What to Ask

Biryani is the one dish at a Hyderabad function that guests will remember and discuss. It is also the easiest to get wrong at scale, because the quantity maths and the cooking method both change above a certain number of guests.

How much biryani per person?

The working figure caterers use in Hyderabad is 250-300g of cooked biryani per adult when biryani is the main dish alongside starters and desserts. If biryani is the only main, plan 350-400g. Children under ten count as half.

Quick quantity table

  • 100 guests — 25-30 kg cooked biryani (roughly 10-12 kg raw rice, 12-15 kg meat for non-veg)
  • 250 guests — 63-75 kg cooked (25-30 kg raw rice, 30-38 kg meat)
  • 500 guests — 125-150 kg cooked (50-60 kg raw rice, 60-75 kg meat)

Add 8-10% buffer for a wedding, where guests serve themselves and plate sizes drift upward. Do not add 25% “to be safe” — that is money straight into waste bins.

What it costs

As a per-plate line item within a full menu in 2026 Hyderabad: chicken dum biryani typically adds ₹120-180 per head, mutton ₹200-300, and vegetable biryani ₹70-110. As a standalone order (biryani, salan, raita, sweet) rates commonly run ₹180-260 for chicken and ₹300-420 for mutton per head, depending on cut quality and guest count.

Full per-plate ranges are on the catering price page.

The thing that actually decides quality: vessel size

Authentic dum biryani is layered and sealed in a deg and cooked on slow heat. A deg has a practical ceiling of roughly 15-25 kg. That means 500 guests is not one giant vessel — it is six to eight degs, each layered and timed separately.

Caterers who cook 150 kg in one drum are boiling rice and mixing gravy through it. It looks the same in the photo and tastes completely different. Ask directly: “How many degs, and what size?” The answer tells you more than any tasting.

Six questions to ask before you book

  1. How many degs for my guest count, and what capacity each?
  2. Kacchi or pakki? Kacchi (raw marinated meat layered with rice) is traditional for mutton and needs a skilled hand. Pakki is safer at scale.
  3. What cut, and what is the meat-to-rice ratio? A good mutton biryani runs close to 1:1 by weight. Ask for the number.
  4. Where is it cooked? On-site keeps it hot and fresh; central kitchen plus transport needs hot boxes and a tight timeline. Both work if planned. Neither works if nobody has thought about it.
  5. How is it held hot during service? Biryani sitting in a chafing dish for two hours dries out. Staggered degs solve it.
  6. Salan, raita and mirchi ka salan — included or extra? They are inseparable from the dish and should never be a surprise line.

Veg guests

If a meaningful number of guests are vegetarian, order a separate vegetable biryani cooked in separate vessels, and have it served at a separate counter. A single shared serving spoon undoes the whole arrangement — a common and completely avoidable complaint at Hyderabad weddings.

Timing

Biryani should hit the counter within 30-45 minutes of the dum being opened. Work backwards from when the majority of guests will eat, not from when the function starts. For a reception with a 7:30 PM start, most people eat between 8:45 and 9:30 — the plan should be built around that window.
